  • Preheat oven to 400°F. Line a baking sheet with parchment paper; set aside. Drain and rinse chickpeas. Air-dry them on a dish towel until ready to use.

  • Mix Manchego, smoked paprika, salt, garlic powder, and pepper in a small bowl. Combine chickpeas and oil in a medium bowl, stirring until coated. Sprinkle with Manchego mixture, and toss to coat. Spread evenly on prepared baking sheet.

  • Bake until chickpeas are cracked and golden brown, 30 to 35 minutes, stirring every 15 minutes. Remove from oven; top with cilantro, flaky salt, and additional Manchego, if using. Serve warm.
